Il percorso degli enoappassionati riserva sempre belle sorprese e opportunità di approfondimento. La degustazione guidata dalla dinamica sommelier Liliana Savioli, svoltasi a Buttrio nella Villa Di Toppo-Florio, a corollario della presentazione della Guida Vini Buoni d’Italia con le sue corone, ci ha regalato nuove e interessanti conoscenze.
Pinela, Zelen e Cipro i vitigni protagonisti della degu-lezione. I primi due a bacca bianca, l’altro a bacca nera. Zona di provenienza la Valle di Vipacco in Slovenia, attraversata dall’omonimo fiume (Vipava) fonte di vita per le vaste zone agricole e soprattutto per i vigneti, orgoglio della valle. Tilen Praprotnik, giovane enologo e proprietario della cantina Steras-Sared 43 – 63010 Izola (Slo), ha contribuito all’approfondimento dell’argomento.
Pinela : è un vitigno che fino a qualche anno fa era presente anche sui Colli Euganei. E’ una varietà che ben sopporta la Bora, pur essendo delicato nella struttura, anche il chicco ha una buccia sottile… E’ allevata su terreno flysch, risalente al periodo dell’Eocene.
Zelen: è un antico vitigno conosciuto già da Apicio, gastronomo dell’antica Roma, che definì il vino zelen, “vino della fecondità”. E’ un vitigno di alta qualità a bacca grossa, buccia con buona presenza di pruina, grappoli robusti.
Cipro è un vitigno parente del moscato rosa riscoperto a Bertocchi, un piccolo paese a nord di Capodistria. Le uve possono cambiare di qualità, quindi è un vitigno non costante, matura precocemente. In Slovenia chiamano likor il vino prodotto dal Cipro. In realtà non è un vino liquoroso ma un vino passito. Ogni produttore ha un segreto per dare la sua impronta al Cipro ( si pronuncia zipro) da sorseggiare a fine pasto o in salotto…
GUERILA Pinela 2011
Giallo paglierino scarico, limpido, abbastanza consistente, al naso abbastanza persistente, fine, floreale-spiccati sentori di frutta esotica-,in bocca secco, abbastanza caldo, con spiccata acidità, sapido, minerale, abbastanza persistente. Vino che ben rappresenta il territorio.

MIRAN PIPAN cantina Pipo Zelen 2005 e 2006
Zelen. vino con riflessi verdolini (zelen il sloveno significa verde)
Del 2005 abbiamo assaggiato due bottiglie diverse, il vino della prima bottiglia era leggermente ossidato. Il vino conservato bene era di un bel colore giallo dorato, limpido, consistente. Al naso intenso, abbastanza fine, persistente, fruttato (fichi secchi, albicocca disidratata, mallo di noce). In bocca secco, caldo, morbido, fresco e sapido.
Zelen 2006: giallo dorato , abbastanza persistente, con note aromatiche ben delineate, sapido, poco persistente.

INGRID MAHNIC Cipro Likor 2011-16,2°
Lasciato maturare sulla pianta ma seguito con attenzione. La vendemmia è stata fatta a novembre 2011,vinificazione con pressatura di 4 giorni, senza aggiunta di lieviti. Di colore rosso granato quasi mattone, al naso si avvertono sentori floreali (glicine, rosa secca) e fruttati ( fichi secchi, ciliegia e uvetta sotto spirito), in bocca morbido con una leggera astringenza.

VALTER SLAVEC Cipro 2011 :colore rosso granato, consistente. Al naso note di salamoia, poi ciliegia sotto spirito e confettura. In bocca risulta morbido, non stucchevole, con una buona acidità. E’ un vino ancora da imbottigliare!

Pinela, Zelen, Cipro…a journey among Slovenian autochthonous varieties – dic 19
The itinerary followed by wine-lovers is always rich of pleasant surprises and good chances to improve each one’s knowledges. The guided tasting where Ms Liliana Savioli – an energetic lady sommelier – was our guide, took place at the Villa di Toppo-Florio, in Buttrio, an ancillary event to the presentation of the Guida Vini Buoni d’Italia. The crowns awarded therein are a really interesting way to advance our awareness.
Pinela, Zelen e Cipro are the varieties that characterized the tasting class. The first two of them are white-berry grapes, the third one is a black-berry variety. The origin is the Vipacco – Vipava valley in Slovenia, named after the river that crosses this area, and which makes this countryside – and in particular the vineyards – so lively and esteemed. Tilen Prapotnik is the name of the young oenologist owner of the cellar in Steras-Sared 43 – 63010 Izola – Isola (Slo), whose precious contribution made possible for us to deepen the matter.
Pinela: until some times ago this variety was grown also in the area of the Colli Euganei. It resists sturdily against the Bora wind, despite the flimsy structure of the plant, the berry too has a thin skin…It grows on flysch type soil, which was formed during the Eocene epoch.
Zelen: it seems that this variety was well known to Apicium, the famous cooking expert and food-lover of ancient Rome; he called the Zelen “the wine of fertility”. It is a high quality vine, the berry is large, with a skin considerably covered with bloom, the clusters are quite sturdy.
Cipro: this variety is a relative of the pink Moscato rediscovered at Bertocchi, a small village that lies north of Capodistria. The grapes are subject to changes as of quality, therefore it is quite irregular, ripens early in the season. The Slovenians call “likor” the wine produced from the Cipro grapes. By all chances it is not sort of a liqueur wine, but rather a wine obtained from withered grapes. Every wine-maker has his own secret system to characterize the production of the Cipro (they pronounce tzipro) they will sip at the end of a meal or comfortably stretched on a sofa.
GUERILA Pinela 2011
Straw yellow, not too intense, clear, quite consistent, quite persistent at the nose, fine, flowery – remarkable scents of tropical fruits – dry in the mouth, quite warm, the acidity is pronounced, tasty, mineral, also the taste is quite persistent. This wine distinctly represents its terroir.

MIRAN PIPAN cantina Pipo Zelen 2005 and 2006
Zelen: a wine with greenish tinges, in fact zelen is the Slovenian word for “green”.
Zelen 2005: we have tasted two different bottles, the first one was slightly oxidized. Instead, the one well maintained had a nice golden yellow color, limpid and consistent. Intense to the nose, fine enough, persistent, fruity (dried figs, withered apricots, nut hull). The mouth feels dry, warm, soft, fresh and tasty sensations.
Zelen 2006: golden yellow, quite persistent, well defined aromas, tasty, not too persistent.

INGRID MAHNIC Cipro Likor 2011-16,2°
Ripens on the plant, but observed with close care. Harvested in November 2011, the vinification follows a 4 days long pressing, no yeasts added. Deep garnet red, almost brick, the nose feels flowers (wisteria, dried roses) and fruits (dried figs, cherry, liqueur raisins), soft in the mouth, slightly astringent.

VALTER SLAVEC Cipro 2011: garnet red, consistent. The nose perceives hints of brine, then liqueur cherries and jam. In the mouth is soft, not cloying at all, very good acidity. And this wine is still waiting to be bottled!
