Sabato 23 giugno abbiamo partecipato ad una serata “bio alternativa” svoltasi all’interno dell’Azienda Agricola Denis Montanar a Villa Vicentina (Ud).
Bio perchè i prodotti presentati provenivano da aziende biologiche per l’appunto, alternativa anche per una rilassante atmosfera bucolica, una scenografia che inseriva i convenuti in un ambiente abbastanza lontano, almeno come abitudini di vita, dalla più frettolosa vita cittadina. Scranni di paglia, balle di fieno quali eleganti “tavoli”, acqua freschissima che sgorgava da una zampillante fontana di pozzo e tutt’intorno vigneti…
Esplorando l’angolo enologico abbiamo conosciuto vignaioli e vini che non avevamo ancora incrociato durante il nostro lungo percorso…
Curioso il Bianco Frizzante dell’Azienda Costadilà (Veneto) da vitigni: prosecco tondo, verdiso, bianchetta trevigiana, macerazione sulle bucce, fermentazione a temperatura non controllata, rifermentazione in bottiglia.
Dell’azienda La Busatina (Toscana), abbiamo assaggiato un uvaggio: malvasia,inzolia, trebbiano e un rosso uvaggio bordolese,cabernet franc, cabernet sauvignon, merlot.
Una scoperta molto interessante i vini di Casa Caterina che rispecchiano inequivocabilmente la esplosiva personalità di Aurelio del Bono, il titolare dell’azienda di Monticeli Brusati (Bs). Ecco i vini che sono stati presentati : Brut reserve millesimato 2003 – L’ESTRO vino da tavola bianco 2006 – VITAGRAMA vdt rosso 2000 – Brut Cremant 2004 millesimato –
“La filosofia della nostra azienda- ci racconta Aurelio – è esprimere e portare sulla tavola del degustatore il piu possibile l’espressione del terroir – vitigni – clima; lo chef de cave è l’espressione di lavorazione in cantina. Noi teniamo a fare vini che lasciano ricordo ed emozioni.Il nostro obiettivo è innanzitutto quello di produrre vino con più possibile naturalezza,con rispetto dell ‘ambiente e specialmente per le vigne da cui provengono le nostre uve , ESSERE IN TUTTO LA MASSIMA ESPRESSIONE DI NATURALITA’!”.
Aurelio trasmette il suo entusiasmo sbracciandosi e raccontando con foga un po’ della sua vita, ci parla della sua Mamma, di cui l’azienda porta il nome, dell’ impegnativo lavoro in vigna e della sua convinzione di fare Franciacorta in un’altra maniera.I vini assaggiati ci hanno dato molte intriganti sensazioni, c’era poco tempo per fare un’accurata degustazione quindi ci siamo ripromessi di andare a trovare Aurelio Del Bono a Casa Caterina, tra i suoi filari e nella sua cantina.
Non potevamo non salutare il nostro amico Vasja Cotar, che ha presentato Il Terrano Spumante e la Vitovska (leggi articolo tra le nostre degustazioni),abbiamo fatto una chiacchierata con Sandi Skerk e assaggiato Vitovska, Malvasia e Ograde (uvaggio).Ci rivedremo anche con Denis Montanar – Borc Dodon – per riassaggiare il suo Friulano e il suo Refosco dal peduncolo rosso, da uve raccolte a mano, i vini sono prodotti con metodo biologico, sottoposti a fermentazione naturale con lieviti indigeni, non filtrati.”Verace “ il Terrano dell’Azienda Derenda di Stanjel (Slo).
Anche lo Stamas rosso 20% cabernet-80%merlot ,di Franco Terpin, ha confermato le sue caratteristiche di vino compatto e di buona struttura.
L’angolo gastronomico, da quello che si leggeva dal programma, avrebbe dovuto essere molto ricco: macedonia di verdure con vinagrette olio e limone, tartara di pomodoro e cetriolo ai sentori di basilico con scaglie di stravecchio, pomodorini imbottiti al farro in mimosa d’uovo, il cucchiaio di tartara di manzo limousine francese con dadolata di peperoni, le rose di roast beef con il sedano e il formaggio, gnocchetti con la carne e l’intingolo dell’oca, i ravioli ai fiori e frutti della zucchina, le tagliatelle in salsa di rucola e noci, la polentina morbida di grano saraceno con fonduta di grana e burro, la polentina dente di cavallo bianco con raguttino di salsiccia, al rosmarino, il pane lievitato naturalmente, i tocchetti di lingua lessa su pisellini novelli, gli straccetti di manzo su carotine prezzemolate,la porchetta e per chiudere in dolcezza la torta di mele con il grano tenero, i dolcetti con le pesche di farina di farro, i biscotti con le erbe spontanee e farina di grano tenero, il melone con il miele e la menta.
Purtoppo qualcosa non ha funzionato perchè la presentazione del cibo è avvenuta con molta lentezza causando l’assembramento di chi, avendo pagato il biglietto, avrebbe voluto non rimpinzarsi ma mangiare qualcosa senza fare lunghe code cercando di acchiappare al volo l’ultima porzione rimasta. Non è stato possibile assaggiare gran che, almeno da parte di chi, educatamente si è rassegnato allo status quo e soprattutto a qualche solito/a “stanziale”che ha come priorità fare man bassa di cibo, più e più volte, infischiandosene degli altri.

Report of an organic and unconventional evening…
On June 23rd, a Saturday evening, we were asked to a special event, an organic and unconventional event that took place in the premises of the Azienda Agricola Denis Montanar at Villa Vicentina (Ud).
Organic because the products proposed were all made in farms which apply organic methods; unconventional thanks to the relaxing atmosphere of the countryside, a scenographic effect spooling up the guests in such an environment so far from the everyday’s habits of most of them, the hustle-and-bustle of the city’s life. Large chairs with straw bottoms, well dressed hay bales playing the role of tables, chilly-fresh water springing from a well-fountain and all around the embrace of the vineyards….
The oenological corner gave us the opportunity of meeting vine-keepers and wines still unknown despite our long experience….
The Bianco Frizzante dell’Azienda Costadilà (Veneto) arouses our curiosity; the varieties blended are prosecco tondo, verdiso, bianchetta trevigiana, macerated on the skins, fermentation at a not-controlled temperature, second fermentation in the bottle.
Then we tasted two wines produced by La Busatina (Tuscany), one made from a blend of malvasia, inzolia and trebbiano grapes, and a red wine, blend of grapes of Bordeaux origin, that is cabernet franc, cabernet sauvignon, and merlot
A rather interesting discovery were the wines produced by Casa Caterina, which undoubtedly recall the ebullient enthusiasm of Aurelio del Bono, owner of the wine-house in Monticelli Brusati (BS). The following wines were presented: Brut reserve millesimato 2003 – L’ESTRO vino da tavola bianco 2006 – VITAGRAMA vdt rosso 2000 – Brut Cremant 2004 millesimato.
“The guidelines of our wine-house – tells us Aurelio – indicate that the guest-and-taster must find on his table a wine performing at the higher level possible the features of its terroir, of the vineyards and of the local climate; chef de cave means to have a skilled person who supervises the work in the cellar. Our trend is to make wines that will leave after them memories and emotions. Our primary target is to produce wine by means of the most nature friendly methods possible, respecting the environment and the vineyards that yield the grapes, ALL OUR WORK MUST EXPRESS OUR FRIENDLY RELATIONSHIP WITH NATURE!”
Aurelio unavoidably transmits his enthusiastic inspiration waving his arms and talking heatedly about his life, about his mother – the wine-house in fact is called Casa Caterina after her name – about the hard and demanding work that vineyards require, and finally about his challenging belief that his Franciacorta is vinified in a different way from any other. The wines tasted so far endowed such intriguing feelings that we have decided to pay a further visit to Aurelio Del Bono at Casa Caterina, to stroll along the vine rows and in the cellar, so making up for the short time that this first approach allowed us.
Pleasantly binding a call to our friend Vasja Cotar who was presenting his Terrano Spumante and the Vitovska (at this purpose you can find our comments in the Degustazioni, Tastings section of this site); then a chat with Sandi Skerk and a tasting of his Vitovska, Malvasia and Ograde (blend of grapes). We paid a visit also to Denis Montanar – Borc Dodon – just to try one more time his Friulano and his Refosco dal peduncolo rosso, made with hand-picked grapes, the vinification complies with organic methods, natural fermentation with wild yeasts, not filtered.
Genuine and natural the Terrano produced by the Derenda wine-house in Štanjel (St Daniele del Carso) (Slo).
The red wine Stamas rosso (20 % Cabernet, 80% Merlot) made by Franco Terpin confirms his compact and well bodied features.
According to the list of food indicated in the program, we should have expected a sumptuous choice: mixed diced vegetables seasoned with an oil-and-lemon vinaigrette, tomato and cucumber tartare with Basel and extra-old cheese flakes, small tomatoes stuffed with spelt and topped with Mimosa eggs (hard boiled then very finely chopped), spoon of French Limousine beef tartare with diced peppers, roses of thinly sliced roast beef with celery and cheese, small dumplings with duck stew and its sauce, ravioli with courgettes and their flowers, tagliatelle served with a rocket and walnuts sauce, soft buck-wheat polenta with parmesan and butter fondue, white dent corn (Zea mays sub-sp. Indentata) polenta with sausage ragout flavored with Rosemary, naturally leavened bread, boiled and diced beef tongue on spring peas, strips of beef with small carrots sprinkled with Parsley, porchetta, that is slices of whole roasted pork heavily flavored with herbs, and – as a sweet final – apple pie with softened wheat grains, spelt flour muffins with peaches, soft wheat flour biscuits flavored with wild herbs, melon seasoned with honey and mint.
Unfortunately something went wrong: the food was presented too slowly indeed and this caused the crowding of who – since an entrance fee was paid – had made up his mind to eat just something – without gorging on – possibly avoiding to stand long queues to try and grab the last serving left over. It has proved to be a quite poor tasting session, at least for those who behaved themselves, unhopefully, and suffering from the manners of some smart guys who seem to be used to snatch every edible stuff within their reach, over and over, not giving a darn whatsoever.
