La Poliphenolica ha il piacere e l’onore di aver battezzato con una degustazione ufficiale,
l’ azienda agricola Korsic ,in località Giasbana (Go). Rodolfo Korsic e Zvonka Bednar sono i capostipiti di un’allegra progenie: Fabian, Mitja e Janja. Fabian che di professione progetta e impianta vitigni ha deciso di dedicarsi anche alla vinificazione con una scelta precisa: produrre un vino bianco e un vino rosso.Ce ne parla durante la nostra visita in cantina. Fabian ha deciso di produrre il Collio Bianco, uvaggio con Friulano (Tocai),Ribolla gialla
e Chardonnay. Ha anche viti di Pinot grigio. E’ stato molto interessante l’assaggio dei mosti che ancora gorgogliavano. Importante, anche se non semplice, cercare di comprendere quale potrebbe essere l’evoluzione del mosto, memorizzare sentori e sapori per confrontarli con lo stesso vino imbottigliato.
Interessante anche l’assaggio di due Friulani vinificati in maniera diversa.
L’uno, ancora spillato dalla barrique. Fabian travasa il vino in botti vecchie di un anno, dopo la fermentazione in vasche d’acciaio. Il vino assaggiato è ancora in fase di stabilizzazione seppur abbastanza equilibrato. Il secondo Friulano è imbottigliato così come il Collio Rosso.
Degusteremo questi due vini più comodamente, prima e in abbinamento alla cena che Zvonka ci ha gentilmente preparato con l’aiuto di Janja ed Elèna.
Ecco le schede:
Collio Bianco 2011 -13°-vitigni: Tocai, Ribolla gialla, Chardonnay.
Giallo paglierino con riflessi dorati, consistente, intenso.
Sentori di fiori gialli, fruttato (pesca, frutta tropicale), graffite, erbe aromatiche (salvia,rosmarino).
Secco caldo, abbastanza morbido, con una leggera astringenza dovuta alla macerazione della ribolla.
Lunga PAI. Armonico, equilibrato, giovane. Tra un anno darà il meglio di sé.
Collio Rosso 2010 -13,5°-vitigni: Merlot 95%, Cabernet 5% (in effetti si tratta di carmenere, vitigno di origine bordolese molto presente in Friuli Venezia Giulia). Rosso rubino brillante con riflessi violacei, consistente, intenso.
Sentori di piccoli frutti rossi (more), floreale (viola, rosa), pepe rosa, cuoio, liquirizia nel retrogusto. Caldo, secco, fresco, tannini morbidi. Abbastanza intenso, abbastanza equilibrato. Pronto.
I due vini sono stati imbottigliati nella speciale e unica bottiglia Collio!
Lo scorso anno la produzione è stata di 4000 bottiglie, naturalmente l’auspicio è che aumentino…
La scelta di Fabian dunque si è manifestata ben ponderata e avveduta visti i risultati incoraggianti dei suoi primi vini. Naturalmente bisogna anche dare una parte di merito a papà Rudy che ha voluto condividere con noi la storia della sua famiglia.
La famiglia Korsic vanta 180 anni di residenza a Giasbana, piccola frazione del comune di san Floriano (Go). L’azienda nasce come proprietà nel lontano 1976. Dieci ettari di terreno sul Collio, sette di vigneti dai quali si seleziona solo l’uva migliore per la produzione del vino. Nel 1928 fu costruita la prima vera casa, Rudy è l’ultimo di nove figli. Nel 1971 il matrimonio con la bella Zvonka, arrivata dalla Slovenia e conosciuta durante una festa. La famiglia aumenta, l’uva si vende alla cooperativa di San Floriano. Si diversificano le attività e i Korsic si occupano di ristorazione, per dodici anni, con grande successo. Ma le cose cambiano. I figli intanto sono cresciuti, Fabian e Mitja impiantano vigneti, soprattutto in Toscana. Rudy e Zvonka decidono di trasformare la casa colonica che era di fronte alla casa di famiglia, in un agriturismo. Nella casa colonica c’erano mucche, galline, maiali, stanze da letto, cucina, bagno, fienile e cantinetta…Dieci lunghi anni ci sono voluti per trasformare la casa colonica, rispettandone l’antica struttura, in un accogliente agriturismo frequentato da clienti provenienti da tutta Europa.
Oltre al vino i Korsic producono un ottimo olio.
Abbiamo testato personalmente la bravura di Zvonka ai fornelli. Semplici ma gustosi i piatti che per la prima volta molti di noi hanno assaggiato:
Tocchetti di prosciutto affumicato con formaggio sloveno. Ma che formaggio?
Ricotta acida, panna acida, yogurt, un pizzico di cumino, un pizzico di paprika, cipolla rossa e olio di zucca, ottimo l’abbinamento con il Collio 2011.
A seguire minestra di castagne con funghi pioppini e porcini e un brasato con patate in tecia e funghi, d’obbligo il Collio Rosso.
Una bella serata, dunque con persone schiette e sincere.
Ho raccontato, in sintesi la storia di una famiglia perché credo sia un paragrafo di storia con la S maiuscola, quella che non è scritta sui libri ma che insieme a tante altre ha posto le fondamenta di un territorio che oggi cerca, a buon diritto, di affermarsi con i suoi prodotti, i suoi vini di qualità, la sua gente ospitale.
I Korsic entrano nel grande mondo dei vini nella speranza che il loro, diventi un grande vino (citazione di Marco Furlan).

Poliphenolica is proud and honored of having sponsored with an official tasting the wine-house and farm of the Korsic family, located in Giasbana, province of Gorizia. Rodolfo Korsic and Zvonka Bednar are the parents of a merry offspring: Fabian, Mitja and Janja. Fabian’s job is to design and implant vineyards, but he decided to pursue also the wine-making activity having in mind a very clear target: to produce one white wine and one red wine.
He tells us about this project during the visit paid to the cellar. He decided to produce the Collio Bianco, a blend of grapes of Friulano (Tocai), Ribolla Gialla and Chardonnay. He raises Pinot Grigio varieties too. It has been a rather interesting experience to taste the musts while still in the gurgling phase. A quite important, even though not so simple issue: try to imagine which could be the evolution of the must, memorize scents and aromas and then compare them with the correspondent wine, once in the bottle.
The tasting of two Friulano wines, vinified with two different procedures, is an interesting try too.
The first one is drawn directly from the barrel. Fabian decants the wine into one year old barrels, after the fermentation in steel vats. This wine, still in a stabilization phase, seems to be quite in balance.
The second Friulano tasted is already bottled, just like the Collio Rosso.
We will enjoy these two wines before and during the dinner kindly prepared by Zvonka, with the help of Janja and Elèna.
Here are the reports:
Collio Bianco 2011 -13°- varieties: Tocai, Ribolla gialla, Chardonnay.
Straw yellow with golden shimmers, weighty, intense.
Hints of yellow flowers, fruits (peaches, tropical fruits), graphite, aromatic herbs (sage, rosemary).
Dry, warm, quite velvety, slightly astringent coming from the maceration of the Ribolla.
Long aromatic persistence. Fair harmony, well balanced, young. One year more and it will perform its very best.
Collio Rosso 2010 -13,5°- varieties: Merlot 95%, Cabernet 5% (by all means rather a Carmenere, a variety originally planted in the Bordeaux region and very popular in Friuli-Venezia Giulia).
Brilliant ruby red, with purple tinges, good body, intense.
We perceive small red fruits (mulberries), flowers (violets and roses), pink pepper [T.n.: also known as American pepper, or Peruvian peppertree], leather, and a liquorice aftertaste. Quite intense, quite in balance. Ready to drink.
Both wines have been bottled in the special and unique bottle called Collio!
Last year’s production counted 4000 bottles, and our warmest auspices are for a great increase…
So the choice of Fabian proved to be carefully reasoned and wise, as we can see from the stimulating results of his first attempts. Of course a sound helping hand came from Rudy, his father, who now shares with us the story of his family.
The Korsic family lives since some 180 years in Giasbana, a tiny village in the municipality of San Floriano, Gorizia. The farm becomes family owned in 1976. The property includes 10 hectares of land in the Collio – approx. 25 acres – and 7 hectares of vineyards – 17 acres – where only the best grapes are selected and forwarded to the wine-making process. In 1928 was built the first house; Rudy is the younger of nine sons. In 1971 he married a pretty girl from Slovenia, Zvonka, whom he met in a festive occasion. And while the family grows the grapes are sold to the farmers’ cooperative store of San Floriano. The activities of the Korsic family now follow different paths and they start a family-run catering business, successfully carried out for 12 years. But times are changing. The kids are now grown-ups: Fabian and Mitja implant vineyards, mainly in Tuscany. So Rudy and Zvonka decide to restore the farmstead facing the family home and obtain an agritourism out of it. The farmstead once was a shelter for cows, chickens, pigs, there were also some bedrooms and a kitchen and bathroom, a haybarn and a small cellar… It took over ten years to turn the farmstead into a cozy agriturism fully respecting the old-times structure: now guests come from all over Europe.
The Korsic family produces also a good olive oil, besides the wine.
We had the lucky chance to test Zvonka’s cooking skills. Simple though tasty dishes, some of which a true new-entry for many of us:
Dices of smoked ham with Slovenian cheese. But what kind of cheese?
Sour ricotta (kind of cottage cheese), sour cream, a pinch of caraway seeds and a pinch of paprika powder, red onions and pumpkin oil: a perfect match with Collio 2011.
Then a soup of chestnuts with wild mushrooms, and to follow a braised beef with stewed potatoes – the famous “patate in tecia” – and mushrooms: the ideal pairing with a Collio Rosso.
A pleasant evening spent with sincere and heart-to heart people.
I told you about the story of a family, since I do believe it to be just a small part of History: the kind of story that you will not find in any book but nevertheless fundamental for the background of a land searching for a statement on the basis of its products, its premium wines, the hospitality of its people.
The name of the Korsic family joins the world of wines and we sincerely expect it to become a great wine. (this is the greeting of Marco Furlan)
